Intro on the Italian Mediterranean diet
inscribed since 2010 on the Representative List of the Intangible Cultural Heritage of Humanity for the safeguard of traditional techniques and the respect of seasonal rhythms.

>>> The Mediterranean diet is a nutritional model prevalent in Mediterranean countries mainly Italy and Greece based on local and imported foods from the East and the Americas: fruit, vegetables, bread and cereals (especially wholemeal), potatoes, beans and other legumes, nuts, seeds and olive oil in large quantities; dairy and wine in moderate daily quantity, and meat and fish in moderate weekly quantity. The Italian crops, harvesting, fishing involves secular skills, knowledge, rituals, symbols and traditions of conservation, processing, cooking, sharing and consumption of food, including craftsmanship like ceramic plates or glasses for the transport, preservation and consumption of food. Food emphasizes values of hospitality, neighbourliness, and plays a vital role festivals and celebrations, bringing together people of all ages, conditions and social classes.

The pioneer of the scientific studies on the Mediterranean diet was the American physiologist Ancel Keys from the University of Minnesota, and creator of the ration K, which had come into use in the US Armed Forces. After doing research in southern Italy he settled in Cilento, south side of Salerno Province. He published his study in 1959” Eat well and stay well”, and  in 1972 “The Benevolent Bean”.   He died in Cilento, Region Campania, at the age of 101 in 2004.

All about european and italian designation quality labels for food and wine:


DOP/PDO – Protected Designation of Origin. European Quality Label
The Protected Designation of Origin (PDO), in Italian “Denominazione di origine protetta” is a label on products which production, processing, and preparation is linked to a given geographical area and to a recognized know-how. Mozzarella di Bufala (Buffalo mozzarella cheese) in example, is a DOP product.

IGP/PGI – Protected Geographical Indication. European Quality Label
The Protected Geographical Indication (PGI)label is given to products of good reputation linked to a given geographical area for at least one of the stages of production, processing, or preparation. Sfusato Lemon from Amalfi , in example, is a IGP product.

STG/TSG – Traditional Specialty Guaranteed. European Quality Label
A Traditional Specialty Guaranteed (TSG) refers to  a traditional character in the composition or means of production and not to a geographical area. Pizza napoletana is a STG specialty.


BIO – Organic Farming Label. European Quality Label
These products have at least 95% of ingredients organically produced and come from the producer or preparer already in a sealed package that bears the name of the producer, the preparer or vendor and the name or code of the inspection body.

Slow Food Presidia
These commitees’ aim is saving from extinction autochthonous breeds and ancient varieties of fruit and vegetables, supporting small extraordinary but threatened products, traditional professions and working techniques. The anchovies’ sauce (Colatura di alici) from Cetara for example is an ancient traditional product supported by Slow Food.

DOC – Controlled Designation of Origin (Italian Quality Label)
From 1992 the committees for food and wines label in Europe use the acronyms  PDO, PGI, and TSG, so the DOC and DOCG acronyms are used exclusively used to distinguish quality wines in Italy. The DOC is a label granted to wines which production discipline is rather strict. DOC wines are commercialized only after undergoing thorough chemical                        and sensorial analyses.

DOCG – Controlled and Guaranteed Designation of Origin(Italian Quality Label)
DOCG (Denominazione di Origine Controllata e Garantita) label is granted to wines that have been recognized DOC wines for at least 5 years and undergo stricter controls and double analyses.


IGT – Typical Geographical Indication (Italian Quality Label)
Quality label for wines referred to a generally large production areas and by a less restrictive discipline than the previous ones.
